- 1,000 Mission Olive Trees located at Carter Estate Winery
- 1,000 trees on average makes 300 gallons of oil a year

- Olives are harvested when they start to go through verasion (when the olives begin to turn from green to black
- Olive oil is made by using an olive mill

How are olives harvested?
-All the olives are picked by hand.
-The olives are monitored for verasion meaning once the fruit starts to change from green to black it is time topick.
-We pick when there is more green on the fruit for a higher quality oil.
-The flavors mellow as the olive ripens and turn black. We are looking for strong and intense flavors which makes a higher quality oil.
